  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill (or mint)
  • Salt and pepper to taste

  1. Start by grating the cucumber using a box grater or a food processor. Once grated, place the cucumber in a clean kitchen towel or cheesecloth and squeeze out the excess moisture
  2. In a bowl, combine the Greek yogurt, grated and drained cucumber, minced garlic, extra virgin olive oil, and lemon juice.
