  • 2 whole Branzino (about 1 pound each), cleaned and scaled
  • Salt and pepper to taste
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Zest and juice of 1 lemon
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish)

  2. Rinse the Branzino under cold water and pat them dry with paper towels. Make a few diagonal cuts on both sides of each fish.
  3. Season the fish generously with salt and pepper, both inside and out.
