Recipe:

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the Branzino under cold water and pat them dry with paper towels. Make a few diagonal cuts on both sides of each fish.
  3. Season the fish generously with salt and pepper, both inside and out.
  4. In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, lemon zest, and lemon juice.
  5. Brush the fish with the prepared herb mixture, making sure to coat them inside the cuts as well.
  6. Place the Branzino on a baking sheet lined with parchment paper or in a roasting pan.
  7. Roast the fish in the preheated oven for about 15-20 minutes, or until the flesh is opaque and easily flakes with a fork.
  8. Once cooked, remove the fish from the oven and let them rest for a few minutes.
  9. Transfer the Branzino to a serving platter, garnish with fresh parsley and lemon slices.
  10. Serve the Roasted Branzino Greek Style hot, either as a whole fish or fillete.
