Melomakarona are a delightful sweet treat with a moist and tender texture. The combination of the honey syrup and aromatic spices gives them a distinct and comforting flavor. They are often enjoyed alongside a cup of coffee or tea, especially during the holiday season. Store the melomakarona in an airtight container at room temperature. They can last for several days and tend to become even more flavorful as they sit. Here's a recipe for Melomakarona:

Recipe:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, semolina flour, cornmeal, baking soda, baking powder, cinnamon, cloves, and nutmeg. Mix well.
  3. In a separate bowl, whisk together the olive oil, granulated sugar, orange juice, brandy or cognac, and orange zest until well combined.
  4. Gradually add the wet mixture to the dry mixture, mixing well until a soft and pliable dough forms.
  5. Take small portions of the dough and shape them into oblong or oval-shaped cookies, about 1-2 inches in length. Place the cookies on a baking sheet lined with parchment paper.
  6. Bake the melomakarona in the preheated oven for about 20-25 minutes, or until they turn golden brown.
  7. While the cookies are baking, prepare the syrup. In a saucepan, combine the honey, water, granulated sugar, cinnamon stick, cloves, and orange zest. Bring the mixture to a boil over medium heat, stirring occasionally. Reduce the heat and let it simmer for about 5 minutes. Remove from heat and set aside to cool.
  8. Once the cookies are baked, remove them from the oven and let them cool for a few minutes.
  9. Dip the warm cookies into the cooled syrup, ensuring they are coated well. Allow them to soak in the syrup for a few seconds, then transfer them to a wire rack to cool completely.
  10. Optional: While the cookies are still wet from the syrup, sprinkle them with chopped walnuts for added texture and decoration.
  11. Once the melomakarona are completely cooled and the syrup has been absorbed, they are ready to be enjoyed!
