Recipe:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, semolina flour, cornmeal, baking soda, baking powder, cinnamon, cloves, and nutmeg. Mix well.
- In a separate bowl, whisk together the olive oil, granulated sugar, orange juice, brandy or cognac, and orange zest until well combined.
- Gradually add the wet mixture to the dry mixture, mixing well until a soft and pliable dough forms.
- Take small portions of the dough and shape them into oblong or oval-shaped cookies, about 1-2 inches in length. Place the cookies on a baking sheet lined with parchment paper.
- Bake the melomakarona in the preheated oven for about 20-25 minutes, or until they turn golden brown.
- While the cookies are baking, prepare the syrup. In a saucepan, combine the honey, water, granulated sugar, cinnamon stick, cloves, and orange zest. Bring the mixture to a boil over medium heat, stirring occasionally. Reduce the heat and let it simmer for about 5 minutes. Remove from heat and set aside to cool.
- Once the cookies are baked, remove them from the oven and let them cool for a few minutes.
- Dip the warm cookies into the cooled syrup, ensuring they are coated well. Allow them to soak in the syrup for a few seconds, then transfer them to a wire rack to cool completely.
- Optional: While the cookies are still wet from the syrup, sprinkle them with chopped walnuts for added texture and decoration.
- Once the melomakarona are completely cooled and the syrup has been absorbed, they are ready to be enjoyed!
