  • 4 lamb shanks
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1/2 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Recipe:

  1. Preheat your oven to 325°F (160°C).

  3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb shanks and sear them until browned on all sides, about 3-4 minutes per side. Remove the shanks from the pot and set them aside.
  4. In the same pot, add the chopped onion and minced garlic. Sauté until they become fragrant and slightly softened, about 3-4 minutes.
  5. Add the diced tomatoes, chicken or vegetable broth, red wine (if using), tomato paste, dried oregano, dried rosemary, dried thyme, bay leaf, lemon zest, and lemon juice to the pot. Stir to combine the ingredients.
  6. Return the lamb shanks to the pot, nestling them into the sauce mixture.
  7. Cover the pot with a lid and transfer it to the preheated oven. Let the lamb shanks braise in the oven for 2 to 2 1/2 hours, or until the meat is tender and easily pulls away from the bone.
