  • 4 bone-in, skin-on chicken breasts or 8 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Zest and juice of 2 lemons
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped (for garnish)

Recipe:

  1. Preheat your oven to 425°F (220°C).
  2. Season the chicken breasts or thighs generously with salt and pepper on both sides.
  3. In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat. Place the chicken pieces skin-side down in the pan and sear them until golden brown, about 5 minutes. Flip the chicken pieces and sear the other side for an additional 5 minutes. Remove the chicken from the pan and set aside.
  4. Reduce the heat to medium. In the same pan, add the minced garlic, dried oregano, dried thyme, and dried rosemary. Sauté for about 1 minute until fragrant.
  5. Stir in the lemon zest, lemon juice, chicken broth, and fresh lemon juice. Scrape the bottom of the pan to release any browned bits
  6. Return the chicken to the pan, skin-side up, and spoon some of the lemon sauce over the chicken.
  7. Transfer the skillet or roasting pan to the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and the juices run clear. The internal temperature of the chicken should reach 165°F (74°C).
  8. Once cooked, remove the pan from the oven and let the chicken rest for a few minutes.
