  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 4 cups vegetable or chicken broth
  • 2 cups water
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
