  • 1.5 pounds boneless, skinless chicken breasts or chicken thighs, cut into bite-sizedpieces
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill (or mint)
  • Salt and pepper to taste

Recipe:

  2. Add the chicken pieces to the marinade and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
