  • 1.5 pounds boneless, skinless chicken breasts or chicken thighs, cut into bite-sizedpieces
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill (or mint)
  • Salt and pepper to taste

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper to make the marinade.
  2. Add the chicken pieces to the marinade and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning during grilling.
